Unripe watermelon

I have just cut the watermelon I intended to have for pudding tonight only to find it is quite unripe. It is a very pale pink with white seeds and isn't sweet at all. Has anyone got any ideas what I could use it for? Can you make melon jam with watermelon?

Yes you can make watermelon jam - I've seen a recipe before but can't remember where. (I just had a look on Google and there are heaps of recipes.)

I would finely chop it, remove the seeds and use it instead of green pawpaw in a thai green pawpaw salad. Let me know if you need a recipe.

Or make a watermelon sorbet - when it's mixed with a sugar syrup, it won't matter that it's not sweet.

Thanks for the ideas Lynette. I don't really want to make jam as it doesn't get eaten much here. I had thought of sorbet (would have to add some colour too I think) but would like to see your recipe for green pawpaw salad.

This isn't authentic but it's one that I make often. I've substituted mango or pineapple for the pawpaw, I've used prawns instead of crab or I've made it without any seafood at all and we always enjoy it.

Salad of Crab, Green Pawpaw, Chilli, Lime & Cashews

Lime & Palm Sugar Dressing
1 cup fresh lime juice
250 grams palm sugar
1 chilli -- roughly chopped
a few coriander roots -- washed
a few basil and mint stems -- washed
2 fresh kaffir lime leaves
2 tablespoons roughly chopped ginger
1 stalk lemongrass -- bruised
good dash fish sauce -- to taste

For the salad
3 telegraph cucumbers, seeded and julienned or peeled with a potato peeler
2 small green pawpaw, skin and seeds removed -- julienned finely
(some have orange flesh but must be unripe
3 spring onions, finely sliced diagonally
2 - 3 red chillies, -- julienned finely
1 1/2 cups coriander leaves -- washed
1/2 cup mint leaves -- washed
1/2 cup toasted unsalted cashews
800 grams crab meat -- cleaned
1/2 cup Asian fried onions

Lime & palm sugar dressing
Bring lime juice to the boil in a saucepan. Remove from heat, add palm sugar and stir until it dissolves, returning to heat if necessary.Using a mortar and pestle, lightly crush the chilli, herbs, lime leaves, ginger and lemongrass. Add this to the lime juice and palm sugar. Allow to infuse for 1 hour. Set aside to cool; season to taste with fish sauce. Strain before using.

For the salad
Combine all the ingredients in a bowl, adding enough dressing to moisten the ingredients. Fold through the crab meat last. Serve in a large bowl sprinkled with crisp Asian fried onions.
