Marinated Fish

Hi There
Does any one have a tried and true recipe for marinated fish. We are off fishing this weekend again and I would like to know a tried and true way of marinating fresh snapper. We have several different ways of cooking and smoking this but having tried just recently marinated fish I would like to give it a go myself. I know that you use lemons but am unable to find a recipe in the books that I have.

Hello Helen,
Marinating fish is more a method than an actual recipe. Lime juice is better than lemon juice and limes (tho' expensive) are in the shops now.

Marinate the fish in lime juice for 2 or 3 hours, drain most of juice away and add a dollop of thick coconut cream, Maldon salt, a splash of sweet chilli sauce, taste and add what you think it might benefit from - a squeeze of garlic, more chilli, some palm sugar, perhaps. Fresh out of the sea it should taste wonderful.

Stephanie those are my thoughts exactly - lime juice is really beautiful and miles better than lemon for this.
I have a recipe for ceviche which is a recipe for this.
I will make sure it is on foodlovers and if not put it on so Helen do take a look in our recipe search.

Helen I have just checked and yes there is a ceviche recipe there. I would use it as a base and add or delete ingredients that you do not care to use e.g the mango, orange, prawns etc...
the base to it is great.

If the lime juice is too much in terms of quantity then add a little lemon to it.

Thanks for the above, we are off in about an hour to the Coromandel for a weekend of fishing and relaxing so will be able to try this, Will let you know Monday.
