Banana Bread (diabetic Friendly)

Ingredients

  • 2 large very ripe bananas
  • ¼ cup unsweetened natural yoghurt
  • 1 teaspoon liquid artificial sweetener
  • 50g butter
  • 1 egg
  • ½ cup white flour
  • 1 teaspoon salt
  • 1 cup wholemeal flour
  • 1 teaspoon baking soda

Method

Preheat
oven to 180 C Mash bananas with yoghurt. Cream sweetener and butter together,
add egg and beat well. Mix together flours, baking soda and salt. Add dry
ingredients to creamed mixture alternately with banana mixture, stirring
to combine thoroughly. Pour into a greased tin and bake for 1 hour. Leave
in tin for 10 minutes before turning out.
