Banana Chocolate Chip Muffins

These muffins are great for school lunch boxes and for morning tea.
If you like the flavour of banana and chocolate together then do try our hugely popular chocolate banana cake recipe.

Ingredients

2 cups flour
3/4 cup sugar
1/2 cup chocolate chips
1 egg, lightly whisked
1 tsp vanilla extract
100g butter, melted
1 tsp baking soda
1 cup milk
1 cup (2 large bananas)  mashed banana

 

Method

Preheat oven to 200 C.
Combine flour, sugar and chocolate chips in a bowl. Make a well in the centre and pour in combined egg,  vanilla, butter, and baking soda dissolved in milk.  Add banana and gently mix until ingredients are just incorporated.
Place spoonfuls into muffin pans and bake for 12-15 minutes until springy on the surface.

  2. @Angela – I have just made these for the first time and as I was putting them in thought ‘there is no baking powder! how weird’. But they have turned out really well and have risen. I use high grade flour so wonder if the type of flour could be a factor????

  6. AMAZING! I use this recipe to make all my muffins, they have turned out perfect everytime! My co-workers keep asking for more! They also work awsome for saltana muffins which my man loves. About to make some now. Definately recommend!!! YUM!

    Loved the muffins, so easy to make. I made mine in paper cups as I wanted to take them to work as a special treat for my co-workers…Why do my muffins stick to the paper cups? I have made apple and date muffins that did the same.

  11. To add a little variation to this recipe and to make your muffins really mosit, I cream the butter n Sugar first, before adding Banana mix.
    In the banana mix, I add 1/3 cup of sultana’s soaked in 2 (heat very lightly and let cool) tablesppons of a pinot or melot.
    This little bit of extra fuild gives a really mosit muffin.

  12. Have just made a batch of these muffins. Perfect. I was worried that the mix looked a bit runny but continued anyway. I used both silicon and non-stick muffin pans filling up to 3/4 level, making 18 muffins. Good rise, well rounded and slipped out of the pans no problem. This is definately being added to my cookbook, yum yum yummy!

    • Hi,
      I greased my muffin trays with butter and they didn’t stick. It’s also best to remove your muffins from the tray while they are still warm. If you allow it to cool, they will stick.

    These are great muffins. I love that I can make them straight after dinner & they are cooked by the time I finish the dishes. The kids love them too!! Totally recommend.
