Bread Sauce

Ingredients

  • 1 brown onion
  • 6 cloves
  • 2 1/2 cups milk (not reduced fat)
  • coarsely ground black pepper
  • 2 1/2 cups (approx 150g) white breadcrumbs from day old bread
  • 1/3 cup cream
  • 15g knob of butter

Method

Halve the onion lengthwise,  poke the cloves into the onion halves.
Pour the milk into a saucepan, add the onion, bay leaf and a good grind of coarse black peppercorns.
Bring the milk almost to the boil and then reduce to a simmer for a few minutes.
Turn off the heat and leave the saucepan to sit for 30 minutes to allow flavours to infuse.
Strain the milk through a fine sieve and return to a wiped out saucepan.
Add the breadcrumbs to the milk and sit aside for 10 minutes before gently bringing to a simmer for 6-7 minutes, stirring at times until the sauce has thickened.  Pour in the cream and butter and gently stir to combine.  Season to taste with salt and pepper and serve alongside turkey or chicken.
