Date and Sultana Cake

This was my grandmother’s recipe – which is so easy and never last’s long in our house

Ingredients

  • 1 cup dried dates (chopped roughly)
  • 1/2 cup sultanas
  • 1 cup hot water
  • 1 cup sugar
  • 75 g butter
  • 1 large egg
  • 1 3/4 cup flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla essence

Method

Preheat the oven to 180"C. Grease and line 20-23cm round tin. Soak dates and sultanas in hot water for 20 mins. Cream the butter and sugar, beat in the egg and add the flour, baking powder and essence. Beat until smooth. Stir in the dried fruit and their water. Pour mix into tin and bake for 1 hour approx. Can be topped with icing sugar or a 1 Tbspn sugar mixed with 1/2 tspn cinnamon. Hope you enjoy this recipe as much as my family
