If desired you can substitute 1/2 cup of orange juice for brandy.
- 1 kg dried mixed fruit
- 2 cups fresh orange juice (eg Charlies or Arano)
- 2 cups self raising flour
Place fruit and orange juice in a non metal bowl and leave to soak over night.
Preheat oven to 175 C
Mix fruit and flour together and pour into a greased loaf pan. Cook for 2 hours.
