Strawberry Eton Mess

Ingredients

  • 1 1/2 punnets strawberries
  • 3 tablespoons orange juice
  • 2 cups (500ml) cream, whipped until soft peaks form
  • 8 meringues, crushed
  • 2 flake bars

Method

Hull and chop the strawberries (reserving a couple for garnish) and place in a bowl, sprinkle with a little orange juice and chill until required.
Just prior to serving whip the cream taking care not to overwhip.
Arrange a spoonful or so of strawberries in the base of 4 parfait glasses.
fold the remaining strawberries through the cream and then crumble the meringues in to the cream and gently mix.  Spoon the cream into parfait glasses and serve topped with a piece of flake and a slice of strawberry.

  1. I have made similar but used greek honey yoghurt instead and grated dark chocolate on top then sprinkled chopped nuts( whatever you have in the pantry.) but will have to try this one. Looks yummy!
    By the way, I serve this in Martini glasses! On special in Farmers at present! Posh!!!

  2. will have to make that EtonMess I made meringues today as my children were coming to share my birthday tea, we had strawberries and ice cream with them but will certainly be trying out that recipe ,looks so easy.
