Ginger gems

Makes 30.
Split and fill with whipped cream if desired.
Ingredients
- 1 tablespoon butter
- 1/2 cup brown sugar
- 1 egg, lightly beaten
- 1 cup golden syrup
- 2 teaspoons ground ginger
- 1 teaspoon baking soda, dissolved in
- 1 cup milk
- 2 cups flour
Method
Preheat oven to 200 C.
Melt butter and sugar, mix in beaten egg. Add golden syrup and ginger and mix well. Mix in baking soda and milk alternately with flour, gently mixing.
Pour inot hot gem irons and bake for 10 minutes or until gems spring back when lightly touched.

I Made these ginger gems today, was worried they would be gluggy
with so much golden syrup but they turned out beautiful.
This is the best gem recipe I have found- easy to make. I made 23 good size gems with this size mix (filling the gem iron to just under the top)- and I will defiantly be making these again- If you are looking for a good recipe give this one a try. Thanks
