Gooey Chocolate Brownie

Thanks to Nicola for the base recipe for this –  it is the recipe I have wanted for ages!

200g dark chocolate, chopped
200g butter
1 cup white sugar
3/4 cup brown sugar
4 eggs
1 teaspoons vanilla extract
3/4 cup flour or gluten free baking mix
1 teaspoon baking powder

 

 

Method

Preheat oven to 160 C.  Place butter in a small saucepan and melt, add chocolate and gently melt, stirring at times.
Beat sugar, eggs and vanilla with an electric mixer until pale and creamy.
Pour in the butter and chocolate mixture and the sifted dry ingredients.  Mix until well combined
Pour mixture into a lined 20 x 30cm slice pan and bake for 45 minutes or until the brownie feels firm and the top has a crust.
Allow to cool and then cut into squares or triangles.

Variations:  dot the surface with frozen raspberries, mix through chopped walnuts or macadamia nuts, mix in white chocolate bits.

  1. Thanks Helen and Nicola for this fabulously decadent recipe. I’ve made two batches of it this morning following the recipe quantities and using Whittaker’s dark Ghana chocolate and it was absolutely gorgeous. Yes it did collapse a bit in the middle however it still had the texture of gooey and a bit chewy which is just so indulgent. I highly recommend and just cut it up in to much smaller pieces so as do indulge without overdoing.

    I was wondering if anyone has tried making this with white chocolate instead? If so, does it work and does it come out too sweet?

  3. Stunning to eat, simple to make, what more can a busy cook ask for !? Added raspberrys and the end result is decadent and delicious. Just make sure you can keep your hands off it long enough to share !

  4. I made it in the weekend and it turned out perfectly! It was nice and soft and gooey inside and lovely and crunchy on top. Will keep this recipe for future use and make a white chocolate one next time!

  5. Felt the ingredients were incorrect? Mine rose far too much and poured over the tin. Had a gooey messy oven to clean! Right temp, right to, right ingredients as per recipe. Strange how some people get it right!

  6. Just made this recipe and NOT happy it sinked in the middle and had to leave it in the oven for an extra 20 minutes and still not cooked probably!!!!!!!!!!!!!!!! Not happy at all, What a waste of time, ingredients and money!!!!!

    • Ummmm…it’s supposed to be…gooey. Like fudge sort of. Not like a cake. Plenty of other boring brownie recipes to try if you want. You can actually buy them in a box at the supermarket if you want!

  8. Ummm, it really is gooey and yummy! I used Whittaker’s Dark Ghana and it is just divine! I made brownie with milk chocolate before and it wasn’t great so definitely need to use dark chocolate.

  9. Don’t know what happened to my brownie but very gooey and hard to cut. I did sprinkle it with raspberries perhaps I didn’t cook it long enough but it had a crust on top and felt firm.

  10. i didn’t like this recipe at all, it has far to much sugar and just sunk in the middle a waste of a lot of ingredients i thort

    • Hi Melissa.
      I am not sure what went wrong when you made it as I I do know the recipe works as have made it lots of times. you can reduce sugar if you want but it shouldn’t sink in the middle!

    • If it sunk in the middle it might be because you opened the oven too early. If you open the oven too early the brownie will sink in the middle

  11. What a winner! Made it today, twice! Great with ice cream or whipped cream on the side… perfect for chocolate lovers. The second one I made with Carob chocolate, less sweet but still divine.

  12. I made this on the weekend with my son and we made it with gluten free flour and it was beautiful and worked perfectly, a great treat

  13. I made this in the weekend with frozen raspberries on top and it had a great balance between crunchy top and gooey inside!! Maybe if it was too sweet it could be the chocolate you are using.

  14. Was this recipe tested have tried it much to much sugar used I think it shouls be cut in half and a cup of flour used. I did not get a good result using the above recipe.

  15. What a yummy recipe but I could feel myself getting fat just thinking about it, wouldn’t dare to make it. Any ideas for making it less so?
