Lupi Spirals with Salmon and Capers

This is a wonderful meal to impress family or when entertaining guests. It looks and tastes just great and is very simple to prepare. Lupi spirals are ideal to use as the sauce ingredients tend to cling to the spiral shapes although other shapes may be used instead.serves 4-6

Ingredients

  • 400g Lupi Spirals
  • 400mls thickened cream
  • 1 1/2 teaspoons prepared mustard
  • juice and rind of 1 lemon
  • 1/4 cup freshly grated parmesan cheese
  • 2 tablespoons capers
  • 200g smoked salmon pieces
  • fresh dill or parsley

Method

Cook the pasta in rapidly boiling salted and oiled water then drain. In a saucepan over a very gentle heat add teh cream, mustard, juice and rind of a lemon and the parmesan cheese. Cook until heated through then remove from the heat and add the capers and the sliced smoked salmon.
Mix the sauce into the drained pasta and sprinkle with a little more parmesan cheese and lightly chopped dill or parsley.
