Moist Bran Muffins

Ingredients

  • 2 cups bran
  • 1/2 cup sugar
  • 1 cup flour
  • pinch of salt
  • 1 cup milk
  • 1 teaspoon baking soda
  • 2 tablespoons melted butter
  • 1/2 cup golden syrup

Method

Preheat oven to 200 C
Place dry ingredients in a bowl.
Warm milk and mix in baking soda.
In a separate bowl mix together melted butter and golden syrup.
Add the syrup and milk mixtures to the dry ingredients.
Combine until just mixed.
Bake in greased muffin pans for 10-15 minutes.

  1. Very moist, which is great for a bran muffin. Rather too sweet for me though, even without any added fruit. Another time I’d drop down to 1/4C sugar and see if that helps, hopefully it won’t muck up the texture too much.

  2. I love love love these muffins. I add banana, flaxseeds, chia seeds and chopped almonds to make them super yummy and healthy for my kiddies. They love it.

  3. These are very nice and as stated moist…I added brown sugar instead of white. Found I only got nine med size muffins from this mix tho which is disappointing as they are eaten very quickly at my house. Thanx Glenny
