Muesli Biscuits

Yield: 24 biscuits

Ingredients

  • 160g butter
  • 3 tablespoons golden syrup
  • 1 cup flour
  • 1 cup rolled oats
  • 1/4 cup sunflower seeds
  • 1/4 cup pumpkin seeds
  • 1/2 cup brown sugar
  • 1/2 cup desiccated coconut
  • 1/2 cup sultanas
  • 1/2 cup chopped dried apricots
  • 1 teaspoon baking soda
  • 2 tablespoons boiling water

Method

Preheat oven to 170 C.
Melt butter with golden syrup over a gentle heat.
In a bowl combine flour, oats, seeds, sugar, sultanas and apricots.
Dissolve the baking soda in water and mix with the butter mixture.  Make a well in the dry ingredients and pour in the liquid, mix well.
Place tablespoons of mixture onto a lined baking tray and bake for 15 minutes or until golden.
Cool on a wire rack and store in an airtight container.

  1. i also made these again ,delicious but found 180gm’s butter too much,cut down to 150gm and turned out better
    nice and moorish

  2. I made a batch of these this morning. I substituted the 1/4 cup of Pumpkin and Sunflower seeds for 1/2 cup chopped Walnuts. They are delicious. Like you, Helen, I am going to have to hide them from myself ! Thanks for the recipe.

  3. I made these today – delicious bikkies that will definitely become a regular in the tins at our house. Mine spread a bit thin at the edges so i might try with a little less butter next time around to see if that helps them to keep their shape a bit better.

  4. I made these today and they are delish! Although lucky any of the mix made it into the oven, was really yummy uncooked!! :-)
