orange and cranberry biscuits

  • 1/4 cup fresh orange juice
  • 1/c cup craisins
  • 150g butter
  • 1 cup castor sugar
  • 2 teaspoons grated orange rind
  • 1 egg
  • 1 cup flour
  • 1/2 teaspoon baking powder


Preheat oven to 170 C
Gently heat the juice and stir in craisins. Leave to sit for 10 minutes. Beat butter and sugar until pale and creamy, mix in orange rind and then egg. Fold in sifted dry ingredients alternately with juice and craisins. Place heaped teaspoons onto a baking tray and leave room to spread. Bake for 15-18 minutes until golden around the edges. Cool on a rack.
