This salmon tastes and looks fantastic, it is the perfect entertaining choice!

- 1 whole side of Regal salmon
- 1 heaped cup fresh breadcrumbs
- finely grated zest of 1 lemon
- 1/3 cup chopped pistachio nuts
- 1/3 cup chopped parsley
- 40g butter, melted
Preheat the oven to 200 C (400 F).
Remove any pin bones from the salmon and place skin side down in a baking paper lined roasting dish.
Combine the bread crumbs, lemon zest, pistachio nuts and half the parsley together in a small bowl. Season with salt and the mix in the melted butter.
Press the crumb mixture over the salmon.
Bake for 15 minutes.
While the salmon is cooking remove the seeds from the pomegranate.
Allow the salmon to rest for a few minutes before carefully transferring to a platter.
Sprinkle with pomegranate seeds and remaining parsley.
