Queen Cakes

Ingredients

  • 125g butter
  • 1t vanilla essence
  • 1/2 cup caster sugar
  • 2 eggs
  • 1/4 cup milk
  • 1 cup flour
  • 2t baking powder
  • 1/2 cup sultanas

Method

Preheat
oven to 190 C. Cream butter,vanilla and sugar and beat until light and fluffy.
Add eggs one at a time and beat well after each addition. Pour in milk and
mix. Sift flour and baking powder together and add sultanas. Fold dry ingredients
into creamed ingredients. Spoon into patty tins which have been lightly
sprayed. Bake for 15 minutes or when the cakes spring back when lightly
touched. Transfer to a cooling rack

    • I (Keith) have been trying to find the Edmonds Cookbook version and got this one instead. From memory it’s about the same. I add a little extra vanilla and mixed fruit if I have it. I agree. Easy to bake and eat. KJ
