Quince Brandy

Ingredients

  • 1 litre (1 3/4 pints) of vodka (the better the vodka the smoother the results)
  • 450g (1lb) caster sugar
  • 8 quinces peeled and coarsely grated (discard the core)
  • 3 large cinamon sticks
  • 20 cloves

 

Method

Use a 3 litre kilner jar or other large bottle or jar that will seal tightly. Place the grated quince, sugar and spices at the bottom of the jar. Pour over the vodka and stir so that the sugar starts to dissolve. Top up with water aprox 2 litres until the jar is almost full and seal. Put the jar on a window sill and shake every day for 2 weeks so that the sugar dissolves. The liquid will turn a dark golden colour. Then leave the mixture to sit for another 2 weeks. Strain through muslin, pour into sterilised bottles and seal. It is ready to drink immediately. It keeps well and improves with age.
