Smoked Salmon and Mascarpone Pizza

Ingredients

  • pizza dough (see recipe)
  • 2 desiree potatoes, washed and thinly sliced
  • salt and freshly ground black pepper
  • ¾ cup grated fresh mozzarella (kapiti cheeses or Parkerfield)
  • ¼ cup grated parmesan
  • olive oil
  • 250g smoked salmon slices
  • 1 medium red onion, thinly sliced into rings
  • caper berries
  • mascarpone

 

 

Method

Preheat oven to 220 C Roll out dough on a lightly floured surface and then place
it on a oiled pizza pan. Arrange potato slices over the base and sprinkle
with salt and freshly ground black pepper. Scatter over the mozzarella and
parmesan and drizzle with a little olive oil. Bake for 15-20 minutes or
until base is golden and potato cooked. Remove from the oven and cover with
smoked salmon slices, onion rings and caper berries. Dot with teaspoonfuls
of mascarpone and serve at once.

  1. Hi Helen your recipe is really going to help me with an assignment for school i have to make 2 pizza’s with a friend. We wanted to do seafood dishes and we had come up with a on tray recipe but not a main. So Mum told me to look on your website for the main course and your smoked salmon one was perfect
