Soft Pretzels

Our lovely homestay Leona from Germany made these for us and also shared the recipe.

Ingredients

  • 2 teaspoons dried yeast granules
  • 1 teaspoon sugar
  • 1 cup (250ml) warm water
  • 500g flour
  • 25g butter melted
  • 1/2 teaspoon salt
  • 3 cups water
  • 3 tablespoons baking soda
  • 2 teaspoons salt
  • 1 egg, lightly whisked
  • flaked or rock salt

Method

Stir the yeast and sugar into the warm water and then set aside for 5 minutes until frothy.
Combine the flour and 1/2 teaspoon salt in a large bowl, make a well in the centre.

Pour in the yeast mixture and melted butter.  Mix to combine and then turn out and knead until smooth and elastic.

Return the dough to the bowl, cover and set aside in a warm spot for 1 1/2 hours or doubled in bulk.

Separate the dough into 8 balls.  Roll these into lengths of about 30cm long.
Fold them into the pretzel shape and then sit them on a baking paper lined tray.Set aside in a warm spot for 1 hour.

Preheat the oven to 180 C.
Bring the water to the boil in a large saucepan and then add the baking soda and salt.  Drop the pretzels into the water in batches for about 30 seconds each.   Remove and return to the tray.
Brush with egg and then sprinkle with salt.
Bake for 15-20 minutes or until golden and firm to the touch.
