Courgette Fritters

Ingredients

  • 4-5 medium courgettes
  • 1/2 cup flour
  • 1/4 cup chopped mint
  • 100 g feta, crumbled
  • 2 eggs, lightly whisked
  • freshly ground black pepper

Method

I love these drizzled with a sauce of natural yoghurt,sea salt, chopped garlic and mint.

Grate courgettes and place in a colander, sprinkle with 1/2 teaspoon sea salt and leave to drain for 30 minutes.

Press courgettes to remove any excess liquid and place in a bowl along with mint, crumbled feta and flour. Make a well in the centre and add eggs, mix until combined. Season to taste with freshly ground black pepper.

Heat a film of oil in a frying pan over a medium heat, place spoonfuls of batter into the pan and cook fritters until golden on both sides. Remove from the pan and drain on paper towels.

Serve warm.

  1. I make a very similar recipe, but I grate the courgette on a clean tea towel and gently squeeze the excess liquid out. I generally cut the feta into small chunks, and I always use brown rice flour instead of regular flour to ensure the fritters are crispy. Delicious.

  2. Just a silly little thing Helen but I searched for courgette Fritters-no result-went to Facebook as I had seen the recipe there & it is under Zucchini, fine but then you call them courgettes in the ingredients area. Gave me a giggle anyway.

    Have also made this with grated carrots instead of succhini (because too expensive) and added a teaspoon of cumin. Difficult to crumble the feta I buy so I grate it into the mixture.

  4. This Zucchini Fritter Recipe looks and sounds so yum! I will pick up some zucchini from my brothers garden on the way home from work and then once home it will out with the frypan-the dipping sauce sounds great too

  6. I love the sound of the courgette fritters. I have been following the weight watchers menus for 10 weeks and have lost 11 kgs :) and the fritters sound just great for a meatless meal. Love your show by the way

    Have made extra batches and frozen for times when no courgettes available.
