Quinoa This mighty little food, pronounced ‘keen-wah’, has been grown on the slopes of the Andes for many millenia. It was one of the staple foods of the Inca people and known to them as ‘chisaya mama’ – mother of all grains. It’s an apt name – quinoa has especially high protein content. Not just ordinary protein either, but high-quality, complete protein, meaning it contains all nine essential amino acids. It boasts the amino acid lysine, vital for tissue growth and repair, but absent from the majority of grains we eat. It is also a good source of magnesium, manganese, iron, copper and phosphorus. Quinoa is very versatile; it’s simple to include it in your everyday diet and reap the nutritional benefits. It cooks in just 15 minutes and the small seeds swell to around four times their size. Quinoa is gluten free and can be used as a base for delicious salads, or as a more nutritious staple in place of rice, potato or pasta.
