Fast Track Cock a Leekie Soup

1 x Tegel Hot Cooked Chicken
1 leek thinly sliced use white part only.
1 cup water
1/4 teaspoon salt
1 cup pitted prunes
1 litre chicken soup- made from a previous chicken carcass or commercially
bought stock.
cracked black pepper

 

Shred 3/4 of the hot cooked chicken. Slice the leek into thin slices, wash to
remove any residual dirt.
Place leek into a large pot with lightly salted boiling water and blanch
for a couple of minutes then strain off water.Pour stock into blanched leeks
then add shredded chicken. Heat through, add prunes and serve with plenty of
ground black pepper.
