“Here is my absolute FAVOURITE cake recipe! The reason why I love it so much is because you can add any fruit that is in season. Last month I used plums and apricots, this month I used pears and apples. Just add what you feel like and I guarantee, the cake will always be a great success!! ENJOY!!

You can use any sort of nuts you like and cinnamon is optional too!

 

Recipe:

200g butter
200g sugar
2 teaspoons vanilla sugar,
pinch of sat,
3 free range eggs,
250g flour,
2 teaspoons baking powder,
125g rolled, ground or chopped oats
50g chopped or ground hazelnuts
1 teaspoon ground cinnamon,
2 tablespoons milk
2 cups of ripe plums cut in about 1.5cm cubes,
icing sugar.

 

Beat butter until fluffy and creamy, add sugar, vanilla sugar and salt and beat until creamy and combined. Mix one egg after the other to the creamy butter mix. Add in another bowl baking powder, oats, hazelnuts and cinnamon together and mix one spoon after the other to the mixture. If dough is too dry add milk for soothing. Add pears and fold them gently into mixture.

Place mixture into greased cake dish and bake at 200 C for about 45 minutes or until teh cake tests cooked.

When taking cake out of the oven sprinkle icing sugar on top and let it rest for another 20 minutes before taking out of the dish.
