Happy Birthday

I made this for my flatmate’s birthday.

The recipe is as below for the cake, the icing recipe was a simple butter cream recipe.

Mummy Darling’s Chocolate Cake
2 cups sugar
2 eggs
1 cup sour milk or plain yoghurt
¾ cup cocoa
200 g soft butter
2 teaspoons baking soda
1½ teaspoon vanilla
¼ teaspoon salt
3 cups self-raising flour
1 cup boiling strong coffee

Put all ingreds into food processor or cake mixer bowl in order given.
Process or beat for 1 minute.
Turn into greased, lined 23 x 33 cm tin (expanding tin, fully
expanded).
Bake at 160°C for 1 hour, or until skewer comes out cleanly.

Butter Cream Icing

Ingredients:
340g icing sugar (replace with some cocoa for chocolate icing)
85g butter
1 to 2 Tablespoons milk
1 teaspoon vanilla

Directions:
Combine all ingredients together and mix well.
