Cocktail Muffins With Brie And Cranberry

Ingredients

  • 2 cups flour
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 1/4 cup oil
  • 1 3/4 cups milk
  • 1 cup grated cheese
  • brie
  • Ocean Spray® whole berry cranberry sauce

Method

Mix flour, baking powder and salt and cheese in a bowl, form a well in the centre. In a separate bowl whisk egg and add oil and milk pour into the dry ingredients. Gently mix being careful not to over mix. Spoon into 36 non-stick mini muffin tins and bake at 200 C for 10-15 minutes until puffed and golden brown. Tip out and cool on a wire rack. Slice muffin and pop in a slice of brie and a little cranberry. Just before serving warm in a preheated oven at 180 C for 4-5 minutes or until brie starts to melt. Makes 36
