Harissa paste

I use my disposable plastic gloves when using chillies.

Ingredients

  • 50 g dried red chillies
  • 3 cloves garlic
  • 2 tablespoons salt
  • 1/4 cup ground cumin
  • 2 tablespoons ground coriander
  • 1/3 cup olive oil
  • Remove stems and seeds from chillies and soak in a little warm water.
  • Put garlic and all ingredients in processor whizz and then add oil slowly until its mixed well.Store covered in oil in fridge although I keep a small jar in the freezer so I never run out.
