Lemon Cordial

I put it into glass bottles and keep in the fridge, but you can cool it a bit, and put it into plastic ones too.

Ingredients

  • 6-8 lemons
  • 2 kg sugar
  • 25g citric acid
  • 25g tartaric acid
  • 25g epsom salts
  • 8 cups water

Method

Peel the rind off the lemons using a potato peeler. Put the rind in the food processor with some of the sugar, and process until the rind is chopped up. Put this and the rest of the sugar and water in a large saucepan and bring to the boil. Remove from the heat and add the acids, and epsom salts, then the juice from the lemons. Strain the mixture and put into clean bottles. Keep in the fridge.
