Microwave Individual Christmas Pudding

Ingredients

  • 120g
  • dried fruit
  • 1 tablespoon brown sugar
  • 30g butter
  • 1/2 cup water
  • 1/2cup skim milk
  • 1 egg, beaten
  • 1 tablespoon brandy
  • 120g self raising flour
  • 1 teaspoon mixed spice

Method

Combine
fruit, brown sugar, butter and water and microwave on high for 5 minutes.
Stir in milk, egg, brandy, flour and mixed spice.
Spoon into 6 ramekins and cover with a paper towel. Cover with paper towels
and cook on medium for 4-5 minutes
