Savoury Potato Pie

Ingredients

  • Puff pastry to line a 23cm pie dish
  • Filling
  • 1 beaten egg
  • 1 cup mashed potato
  • 1 small onion finely chopped
  • 1 tablespoon chopped parsley
  • 1/2 cup grated cheese
  • , 1 grated apple (optional)
  • , 1 teaspoon chopped mint

Method

Preheat oven to 200 C
Line a 23cm pie dish with pastry.
Put all remaining ingredients in a bowl and mix well. Pile mixture on top of pastry. Bake for 20 minutes and then reduce temperature to 170 C and cook a further 15 minutes. Serve hot or cold.
