Strawberry Pillows

Ingredients

  • 2 sheets frozen puff pastry
  • 1 egg, beaten
  • 1 tablespoon white sugar
  • 2 punnets strawberries, hulled
  • 200ml thickened cream
  • 100ml natural yoghurt
  • 3 tablespoons icing sugar

Method

Heat oven to 200 C Cut pastry sheets into 8 squares of equal size. Place on an oiled tray and brush with beaten egg and sprinkle with white sugar. Bake for 15-20minutes until lightly golden and puffed. Remove from the oven and allow to cool. Whip the icing sugar and cream until thick and fold in the yoghurt. Place pastry squares on plates and spread with a thick layer of cream. Arrange strawberries on the cream. Spread the underside of the top pieces with cream and carefully place over the strawberries. Serve with a jug of strawberry coulis.
