Banana Cake (Liza)

It doesn’t need icing – it’s very moist and moreish! Freezes extremely well too.

Ingredients

  • 250 g self raising flour
  • 180 g caster sugar
  • 125 g dates, chopped
  • 1/2 teaspoon baking powder
  • Pinch of baking soda
  • 60 g melted butter
  • 2 eggs, whisked
  • 3 ripe bananas, mashed

 

Method

Preheat oven to 160 C fanbake.
Grease well a loaf or ring pan.
Mix all dry ingredients together and then add wet ingredients.
Add mixture to pan - drop pan on workbench a few times to get rid of bubbles.
Bake for 1 to 1 & 1/2 hours.
