Blueberry Pie

My family love this pie, try it with cream or vanilla ice cream.

Ingredients

  • 2 cups flour
  • 1/4 cup sugar
  • 125g, butter, chilled and chopped
  • 1 egg
  • 1-2 tablespoons cold water
  • 50g butter
  • 2 tablespoons Edmond's plain flour (use 1 tablespoon more for frozen berries)
  • 1 teaspoon cinnamon
  • 2 - 2 1/2 cups blueberries
  • 1 egg yolk

Method

Place flour and sugar in the bowl of a food processor, process and drop pieces of butter in while the machine is running until mixure resemebles coarse crumbs.  Add egg and just enough water for the mixture to come together to a ball.  Turn out and wrap in plastic clingfilm and then chill for at least 30 minutes.
Preheat oven to 180 C.

Roll out pastry and line a 24cm greased pie dish, refrigerate until required.

Rub second measure of butter into sugar, flour and cinnamon until well combined (I do this in the food processor). Scatter blueberries over pastry base and then sprinkle over sugar mixture. Cover with a pastry lid and brush the top with egg yolk.

Bake for 30 minutes until pastry is crisp and golden.
