Caramel Banana Pudding

Ingredients

  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup sugar
  • 1/2 cup milk
  • 2 egg yolks
  • 1 teaspoon vanilla essence
  • 4 ripe bananas
  • 1/2 cup brown sugar

Method

Preheat oven to 160 C.
Sift together flour, baking powder, salt and sugar.
Lightly whisk milk, egg yolks and essence and combine with dry ingredients.
Grease a baking dish with butter and scatter with the brown sugar. Cover this with sliced banana and then pour over the batter.
Bake for 25 minutes.
Serve with cream or ice cream.
