This is a fantastic cake for a party as it is large enough for a crowd and stays fresh if made a day or so ahead.

Ingredients

• 3 1/2 cups flour
• 3 1/2 cups sugar
• 3 teaspoons baking powder
• 1 1/2 cups cocoa
• 1 cup oil
• 2 cups milk
• 3 teaspoons baking soda (dissolve in milk)
• 1 teaspoon salt
• 4 eggs
• 1 teaspoon vanilla extract
• 2 cups boiling water

Method

Preheat oven to 160 C.
Place all ingredients except boiling water in a cake mixer and mix until smooth. Pour over boiling water and gently fold through the batter.
Pour into a lined 30 cm cake pan and bake for 1 hour or until cake tests cooked.
