Christmas Fruit Mince

Ingredients

  • 250 g raisins
  • 250 g sultanas
  • 150 g currants
  • 60 g mixed peel
  • 125 g suet (can use butter), grated
  • finely grated rind of 1 lemon
  • juice and grated rind of 1 orange
  • 75 g dried apricots, finely chopped
  • 75 g blanched almonds, chopped
  • 60 g glace ginger, chopped
  • 1/4 teaspoon nutmeg
  • 1 teaspooon mixed spice
  • 150 g brown sugar
  • 1 large green apples, grated

Method

Place all ingredients into a large bowl and mix well. Refrigerate overnight and then mix well again.
Store in sterlised jars.
