Corn Relish

Ingredients

  • 3 cups corn kernels
  • 2 cups chopped cucumber
  • 2 cups chopped tomato
  • 2 cups chopped onion
  • 1 tablespoon common salt
  • 1 tablespoon tumeric
  • 1 tablespoon mustard
  • 2 cups sugar
  • 2 cups vinegar
  • 1 ½ tablespoons cornflour

Method

Place
all ingredients except ½ cup vinegar and cornflour into a saucepan and bring
to the boil. Simmer for 50 minutes, thicken with cornflour mixed in vinegar
and return to the boil. Continue to cook for another 10 minutes. Pour into
sterilised jars and seal.
