Cranberry Chocolate Truffles

Ingredients

250g dark or milk chocolate (the better the quality the better the truffles)

1/4 cup cream

25g unsalted butter

1 pkt (170g) Ocean Spray® Craisins® sweetened dried cranberries
Method
Chop together the chocolate and Craisins® either by hand or in a food processor. Heat together the cream and butter until boiling and then add the Craisins® and chocolate stirring until the chocolate has melted. Refrigerate for several hours or until mixture is firm enough to handle. Using either a melon baller or teaspoon to scoop the truffle mixture roll into balls and then place on a tray lined with baking paper. Refrigerate until firm and either dust with cocoa or dip in melted white or dark chocolate and decorate with a Craisin®.
Store in a cool place in an airtight container. Will keep for a week.
