Edmonds Bacon and Egg Pie

  • 2 sheets Edmonds flaky puff pastry
  • 1 onion, finely chopped
  • 1 cup chopped bacon
  • 1/2 cup mixed vegetables
  • 2 tablespoons spicy chutney
  • 6 eggs
  • salt and pepper
  • milk


Use 1 sheet of pastry to line a greased 20cm square shallow cake tin.  Sprinkle onion, bacon and mixed vegetables evenly over pastry.  Dot the chutney on top.  Break eggs evenly over, pricking the yolks so they run slightly.  Season with salt and pepper to taste.  Carefully lift second sheet of pastry over filling.  Brush top with milk.  Bake at 200 C for 40 minutes or until well risen and golden.  To serve, cut into squares.  Serve hot or cold.
