Festive Chocolate Brownie

Ingredients

1/4 cup
brandy

1 cup
Tasti fruit mix

150g
dark chocolate, roughly chopped

butter
-
1 cup
sugar

2
eggs
-
70g packet
Tasti Blanched almonds, lightly toasted and roughly chopped

1/4 cup
Tasti chopped crystalised ginger
-
100g
flour
-
2 tablespoons
cocoa
Method
Preheat the oven to 160 C.
Line a 30x18cm slice tin.
Heat the brandy in a small saucepan until starting to boil. Remove from the heat and add the fruit mix, stir to combine and then set aside.
Place the chocolate and butter into a bowl and heat over a small saucepan of simmering water until just melted. Stir until smooth.
In a mixing bowl beat the eggs and sugar until pale and creamy, mix in the chocolate and butter mixture and then stir through the fruit, almonds, ginger and combined flour and cocoa.
Bake for 45 minutes until the top has a firm crust and starts to crack a little.
Cool before slicing.
