Fig, Prosciutto and Blue Cheese Pastries

Ingredients

  • 2 sheets butter puff pastry
  • 8 think slices prosciutto
  • 8 figs
  • 1 egg yolk, lightly whisked
  • 75g blue cheese
  • freshly ground black pepper

Method

Preheat oven to 200 C.  Cut pastry into 16 even sized squares.  Place squares on a cold baking tray.
Place a curl of prosscuitto in the centre of each square.
Cut figs in half and then take a thin slice of each outer edge so that fig halves can sit flat, place in the centre of  proscuitto.
Brush pastry with egg yolk and bake for 15 minutes until puffed and golden.
Remove from oven and place a slice of blue cheese on each and a grind of pepper.
Serve warm.
