Fillet of Beef with Caperberry butter and Prosciutto

Ingredients

  • 1 whole fillet beef (1.5kg)
  • 100gm butter
  • 1/4 cup drained caperberries
  • 4 anchovy fillets
  • 1/4 cup chopped parsley
  • 3 garlic cloves crushed and chopped
  • 1/4 cup fresh breadcrumbs
  • Salt and pepper
  • 250g prosciutto

Method

Preheat oven 210C
Place fillet on a board and cut in half lengthwise.Soften butter. Chop caperberries roughly mix into butter with anchovies,parsley,garlic and breadcrumbs.Spread this mixture over one half of the fillet and cover with the other half.Sprinkle with salt and pepper and wrap in prosciutto.
Heat a roasting pan with a little oil add beef and cook 15-20 mins for rare or cook until it is to your liking. Remove and rest covered 15mins. before slicing
