Frosé (Frozen Rosé)

This is certainly the drink for summer.  Cool and delicious it is just the thing for entertaining on hot summer days.
Frose is a good way of using up less than perfect berries and can also be made with frozen berries.

Yield: 6

Ingredients

  • 1 x 750ml bottle Rosé (buy one with a good depth of colour as it will fade a bit with freezing)
  • 1/2 cup sugar
  • 1/2 cup water
  • 1/2 cup chopped strawberries
  • 1/2 cup raspberries
  • 1 tablespoon lemon juice

Method

Pour the rosé into a resealable plastic bag and freeze overnight or for 10 hours. It won't be solid due to alcohol content but it will be firm. Heat the sugar and water in a small saucepan and stir until sugar is dissolved, bring to the boil and then remove from the heat.  Add the strawberries and raspberries to the syrup and allow to infuse for 30 minutes.  Strain the liquid off, gently pressing the fruit but not pushing them through the sieve. Put the frozen wine into jug of a blender with the berry syrup and lemon juice.  Blend until well mixed.  Pour the mixture back into the plastic bag and return to the freezer. Freeze for a further 2 hours (or more) before scooping into glasses.
