Broken Biscuit Chocolate Fudge Slice

An oldie but a goodie. Who doesn’t like Fudge Slice or otherwise called Hedgehog Slice.
The great thing is that it is unbaked so no cooking involved.

 

 

 

 

 

 

Ingredients

  • 250g butter
  • 1/4 cup cocoa
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 packets wine biscuits
  • 2 eggs

Method

Line a large slice pan with baking paper. Melt the butter, cocoa and sugar together in a small saucepan, stirring to dissolve the sugar.  Remove from the heat and add the vanilla, cool until just warm. Place the biscuits into the bowl of a food processor and pulse until chopped but not crumbs.  This may need to be done in batches. Lightly whisk the eggs in a small mixing bowl.  Stir the eggs into the chocolate, mixing well. In a large mixing bowl combine the biscuits with the chocolate mixture. Press into the prepared slice pan. Ice with chocolate or chocolate mint icing. Refrigerate overnight before cutting into bars.
