Gluten Free Fruit Cake

Preheat oven to 180 C.
Place butter, brown sugar, dried fruit and boiling water in a saucepan and boil for 10 minutes. Allow mixture to cool.
Add eggs to fruit along with orange and carrots. Sift over combined rice flour, baking soda, cream of tarter and mixed spice. Mix to combine.
Pour into a lined cake pan and bake for 50-60 minutes until cake tests cooked.
