Nectarine Paste

Ingredients

  • 1 kg nectarines
  • Water
  • 500 g sugar

Method

Wash nectarines and cut in half remove stones.
Place in a saucepan and just cover with water.
Bring to the boil,then simmer until fruit is soft.
Puree fruit in a food processor.
Return to saucepan with sugar and stirring often bring back to the boil.
Simmer stirring frequently until pulp is very thick this will take about 30 minuetes.
The traditional test for this is when a wooden spoon is drawn across the base of the saucepan, the pulp on either side of the line won
