This is a cake I used to make many years ago & it was so popular with everyone I got fed up with making it!
Preheat oven to 180 C
Put butter, honey & sugar into a small saucepan over a gentle heat, stir to melt then add peanuts, stir well.
Grease & paper line a 23cm cake tin, spread the mixture into this.
In a blender sift flour, baking powder & salt together add butter & blend until crumbly, stir in sugar.
Beat egg, milk & vanilla together.
Add to dry ingredients mix well to combine.
Put into cake tin on top of peanuts etc., spread evenly.
Bake at 180o for 35 to 40 mins. or until tested with a skewer.
Turn out immediately & peel off paper replacing any nuts that may have come off onto the paper.
Leave to cool.
I always put my cake tin into a large dish as the butter sometimes runs out onto my oven, saves a mess afterwards.
