Pecan Apple Crunch Cake

  • 250g butter
  • 3/4 cup caster sugar
  • 1 teaspoon vanilla essence
  • 2 eggs
  • 1 1/2 cups plain flour
  • 1/2 cup self raising flour
  • 1 teaspoon baking soda
  • 1 cup milk
  • 1 medium apple, peeled, cored and grated
  • 3/4 cup sultanas
  • 1 cup finely chopped pecans
  • 2 tablespoons soft brown sugar
  • 1/2 teaspoon ground cinnamon


Preheat theĀ oven to 180 C. Beat butter and sugar until pale and creamy, add vanilla
and mix well. Beat in eggs one at a time. Fold in sifted flour and soda
alternately with milk. Add the apple and sultanas and mix well.Spread half
the cake mixture into a greased and lined 25cm cake tin. Sprinkle wtih half
the combined pecans, brown sugar and cinnamon. Spread evenly with the remaining
cake mixture and top with the pecan mixture, pressing gently into cake mixture.
Bake for 1 hour or until cake tests cooked.
