Regal Marlborough Salmon with Mango Salsa

Serves 4
Combine the salsa ingredients in a small bowl.
Season with salt & pepper and set aside.
Preheat the oven to 180°C.
Heat an oven proof, non-stick frying pan over
medium-high heat. Rub the salmon fillets with oil
and season well with salt and pepper. Place fillets
into the frying pan, skin side up.
Sear until brown and crisp, about 3 minutes.
Turn the fillets over and bake in the oven until
just cooked through, about 5
