Spicy Chicken And Cous Cous Soup

Ingredients

1 onion, peeled and chopped

1/4 teaspoon harissa paste

1 tablespoon tomato paste

1 teaspoon paprika
-
1 teaspoon turmeric
-
1 tablespoon olive oil
-
1 tablespoon butter
-
500g chicken breast fillets, roughly chopped

400g
can chopped tomatoes
-
2 litres
chicken stock
-
1/2 cup
cous cous
-
2 tablespoons lemon juice
-
1/4 cup
chopped mint
-
1/4 cup
chopped parsley
-
1/4 cup
chopped coriander
Method
In a large saucepan gently cook the onion, pastes, paprika and tumeric in combined olive
oil and butter.
Add the chicken pieces and tomatoes, cover with chicken stock.
Simmer for 20 minutes and then add the cous cous.
Simmer until cous cous is tender and season to taste with salt and freshly ground black pepper.
Add lemon juice, mint,
parsley and coriander and serve.
