Stir-Fry Pork In Lettuce Parcels

Ingredients

  • 1 iceberg lettuce
  • oil
  • 2 cloves garlic crushed or 1 teaspoon crushed garlic
  • 2 teaspoons grated ginger or 1 teaspoon crushed ginger
  • 2 chillies diced and seeded or 1 teaspoon crushed chilli
  • 1 kg pork mince
  • soy sauce
  • 4 spring onions chopped
  • coriander or parsley
  • chilli sauce to taste

Method

Peel whole leaves off an iceberg lettuce, wash well and chill until needed. Heat a large heavy based frypan or wok until hot, add a drizzle of oil, garlic, ginger and chilli and cook for 1 minute. Add pork and cook until it browns. Add soy sauce to taste, spring onions and coriander or parsley. Spoon into lettuce cups add a dollop of chilli sauce, roll up and serve immediately. Serve with steamed rice if desired.
